‘There’s almost a hidden power about some pinots that’s often described as a peacock’s tail, an explosion of flavour in the back of your mouth which becomes more apparent in great pinot noirs when they have some age,’ explains founder and winemaker Phillip Jones, neatly suggesting what he is hoping to capture in his own wines as they mature – a sudden fanning-out of nuance and flavour akin to the way a peacock reveals the colour and patterns of its magnificent plumage. Such a poetic image belies Phillip’s background as a research engineer, and the painstaking philosophy that established Bass Phillip as the original marker for great Australian Pinot Noir.
